It is egg, but it is eggless.
It is time to consider how our food consumption plays a role in our fight against climate change. The goal of this project was to explore the possibilities of new forms and ways of eating a vegetarian diet in a future meatless era.

Changing to sustainable diet is a global issue
As the international community prepares to move forward with the implementation of the Sustainable Development Goals and closing the emission gap, it is high time for individuals and the whole society to take actions in reducing the adverse impacts of food consumptions.
Therefore, the future of food and people’s eating habits would be more sustainable and climate-smart.
Majority of the people want to eat sustainably, however, it is hard to do so.
It is difficult because making a transition to vegetarian diet offends personal interests, whether it is taste, nutrition or efficiency, as a result, people don’t feel the need to change their current eating habits.
How to make a balance between sustainability and personal interest?
Introducing “Eggless”
Eggless is a new food exploration and cooking method for people to better adapt to the future meatless era.
Based on findings of the importance of visual signals in people’s food choice, I think it is essential to change the form of vegetarian food than to enhance the taste of it, so as to reinstate people’s interest in vegetarian food.
I found that “egg” is an excellent food form, which meet people ’s requirements of the taste, protein content, and also their attempt to try a more sustainable diet. In addition, eggs have many common characteristics in food shape, color, texture with that of meat.
I also created a recipe which guides people to cook this food by themselves.
“Eggless ” Dinner Party
I hosted a dinner party at home, invited people to taste “EGGLESS” jelly, which was made by several vegetables (e.g.carrots, cucumbers, tomatoes, etc). Besides, I prepared an invitation card and a menu of the meals to let people engage more in this future food party.
“ The process of peeling the eggshell is very interesting, which makes me more curious to see what it looks like from the inside. I can’t wait to see this turn into a reality in the near future! “
Result
In the party, almost everyone showed their interest towards the “Eggless” jelly. At first, they didn’t know how to eat this, but later on some people started to peel the eggshell and eat a small piece of it. The results of the tasting experience show that there is still a scope of improvement in the taste of the food. However, this new food form has successfully attracted normal consumers, and the people said this new eating experience does bring more pleasure and fun.
Therefore, the eggless tasting test is successful!
The feedback showed that people are willing to try this food production which is made out of vegetables. This food form and cooking method gives people a new way to interact with vegetarian food. In addition, my future work would focus on how to create a better dining experience of a vegetarian diet by using various cooking methods and discover a way to strengthen the relationship between the food and its consumer.
